 Baby back ribs are very popular in the summertime for barbecuing. There are even contested for this great cut. People will taste test the ribs & sauces, however the best recipe are unless without a great rib to start with. Ribs are one of the most expensive cuts of meat, even though there is little meat on them. With only two (sides) of ribs to a hog and a great demand of them, this drives the price up. The Baby Back Rib come from the side part of the pork rib cage. You can see the way a baby back is cut from this chart made at Jim's. By leaving a generous amount of meat on our ribs, you get the meatiest baby backs for you buck

  

Where do BB ribs come from?

   We start with a nice center cut loin. This is a great cut of pork.
With a knife we cut a long the rib bones, but not to close to the bones as we want to leave some nice meat on the rib.
The rib is on the left side and the boneless loin is on the right. 
As we continue to cut away the bone the two piece will separate. We will saw off the bone area shown here too.

We will skin the back off the rib, as this skin is very tough. 
And VoilĂ , a nice rib ready for the barbecue
