Ingredients

• 5 tablespoons butter
• 3 tablespoons honey
• 4 teaspoons chili powder
• 2 tablespoon orange juice
• 1 teaspoon lemon juice
• 2 Cornish hens, halved
• salt and pepper, to taste

Directions

1. Preheat oven to 350°.
2. Melt butter and stir in honey & chili powder.
3. mixing well.
4. Stir in lemon & orange juice, salt and pepper and remove from heat.
5. Cut each hen into two halves.
6. Rinse well and pat dry with paper towel.
7. Place hens in baking dish, skin side down, and place in oven for 6-8 minutes.
8. Turn hens over and baste generously with all of the mixture.
9. Bake for approximately 45 minutes or until well browned. Serve with your favorite sides.
