Cutting
a chicken take me about 15 seconds, but I might add I have
cut-up thousands of them. It may take more than one try to
get the hang of it, however, once you've got it down, you
can cut up a chicken like a pro, with hardly any effort!
Perhaps the most important reason to learn how to cut up a
whole chicken is that it will save you money. By buying a
whole chicken you can get it cheaper than buying pieces,
plus its good to know, as the same method can be used for
cutting up other fowl like ducks and turkey. The leftover
parts are great for soup stocks.
HOW TO
Note,
my first rule is to use a
standard, sharp
kitchen knife. A dull
knife can make it hard to
cut, plus you can possibly
cut yourselfby muscling the
knife,
making it slip.
1.
Cut the skin between the
thigh and body.
2.
Bend thigh back with you
finger to expose the joint,
as you bend it the bone will
pop from the socket.
.
3
Cut through the joint,
separating the leg from the
body. Repeat this procedure
on the other leg.
4.
Now you can just cut between
the thigh and drumstick
joint, by cutting the knee
joint apart.
The wings are very easy to do, just pull
away the wing from the body. Bending the wing back exposing
the joint.
Cut through the joint. Repeat this on the
other wing.
Now comes the tricky part. Hold the breast
up right as shown.
Cut from the neck down to separate the
breast from the back Please be careful as the chicken can
slip.
continue cutting down along the breast and
back ribs under its separated.
Repeat this on the other side.
You can divide the breast in half,
lengthwise by cutting the cartilage a little on the inner
breast bone.
Once this is cut, grasp the breast at each
side and bend breast open as shown. This should snap the
wishbone and open the breastbone up.
Bend again and the breast bone will be easy
grab it with your fingers, pulling it our.
Now cut thru the breast meat.
Its that easy!
In some cases you only need parts.
This would be a case to buy parts only. We will always cut
-up you chicken for free.
