Smoked Pork Shank are cut from the front leg (shoulder) and are
similar to Pig Hocks cross cuts. They contain two round shank bones
exposed at both ends. For best cooking they should be cut like you see
in the photo. Excellent for beans, usually prepared by braising or by
cooking in liquid. They are a winter favorite. There are many great
receipts for smoked shanks out there too. For a great change, stop in
